Ingredients:
2 tbsp olive oil
1 medium onion, chopped
700g cherry tomatoes, whole
1 hot chilli, finely diced
4 small okra, finely sliced
2 garlic cloves, minced
1 tsp lemon juice
5 basil leaves
salt to taste
Method:
Heat the oil in a pan, add the onions and fry for a few minutes then add the tomatoes, chilli, okra and cook on medium heat until the tomatoes begin to wrinkle. Stir the mixture then cook for a further 16 minutes. When the skins of the tomatoes begin to split add the salt, garlic and lemon juice then mash the contents of the pan with a wooden spoon. Add the basil leaves and simmer for 5 minutes.
Serve with Muufo Baraawe anjeero (the Somali version of Injeera) or with pasta (which became popular under Italian rule).
