Barbecued Mackerel (Maquereaux Braisés), a classic Cameroonian dish of mackerel marinated with tomato and onion puree and flavoured with ginger that are cooked on a barbecue and served with fried plantains.

Ingredients:

4 mackerel (about 500g each)
6 tbsp tomato purée
6 tbsp onion purée
1 1/2 tbsp freshly-grated ginger
generous pinch of hot chilli powder
2 tbsp fresh parsley, finely chopped
5 tbsp olive oil
salt and freshly-ground black pepper, to taste
1 vegetable stock cube
6 large plantains

Method:

Clean and scale the fish and season liberally with salt and black pepper.

In a bowl, mix together the oil, tomato purée, ginger, parsley, chilli powder, stock cube and onion purée. Mix well then rub this mixture liberally inside and outside the fish. Arrange the fish in a dish and set aside to marinate in the refrigerator for 4 hours.

In the meantime, pre-heat your barbecue or grill. Place the fish over hot coals (or under a hot grill [broiler]) and cook for between 10 and 15 minutes per side, or until cooked through.

In the meantime, peel the plantains and cut at a slight diagonal into ovals. Heat oil in a deep fryer, add the plantain pieces and deep fry until golden brown. Serve the fish accompanied by the plantain chips.
