This is a recipe for classic Manx pancakes that are served large and lightly leavened.

Ingredients:

280g (2 1/3 cups) flour
1.135ml Buttermilk
1 tsp bicarbonate of soda
1 tsp salt
butter, for greasing

Method:

Add the flour, bicarbonate of soda and salt to a minxing bowl and whisk to combine.

Gradually beat in the buttermilk, incorporating so that you end up with a smooth batter, free of any lumps.

Place a frying pan over medium-high heat. Grease with butter and when hot add a teacup of the batter to the pan. Twirl the pan to spread the batter evenly over the base. When bubbles rise to the top of the batter and the base is golden brown carefully flip the pancake over and fry until browned on the other side.

Transfer to a low oven to keep warm as you cook the remaining batter.

Take the mound of pancakes to the table and rub a little butter over each pancake as you serve them out.
