Peel and core the apples. Slice then combine in a pan with 2 tbsp honey. Stew over medium heat, stirring, for seven minutes until the apples are soft.
Turn into a buttered pie dish and spread evenly over the base.
For the sponge, cream together the butter and sugar. Stir in the remaining honey then beat until pale and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition.
Sift over the salt and flour then fold into the liquid ingredients. Pour the resultant batter over the apples then transfer to an oven pre-heated to 180°C (350F) and bake for 25 minutes, until the sponge is golden on top and firm to the touch.
