Mandarin Prawns

Ingredients:

175g egg noodles
2 tsp cornflour
1 tbsp cold water
3 tbsp soy sauce
3 tbsp Chinese rice wine (or dry sherry)
3 tbsp tomato purée
1 red pepper cut into thin rings
100g mange tout, trimmed and halved lengthways
6 spring onions, halved lengthways and cut into 5cm lengths
2 cloves garlic, thinly sliced
25g butter
225g cooked and shelled large prawns

Method:

First cook the noodles as indicated on the packet and set aside. Meanwhile, blend the cornflour with the water, add the soy sauce, sherry and tomato purée. Whisk and set aside.

Heat a wok, add the butter and when melted add the vegetables and garlic. Fry for about three minutes then add the prawns and cook for a further three minutes. Pour the cornflour mixture over the top, cook for a minute then drain the noodles and add to the prawn mixture. Toss to mix thoroughly then serve immediately.
