Heat the oil in a pan, add the onions and fry for about 6 minutes, or until translucent. Add the garlic and stir fry for a further 3 minutes then stir in the chilli powder and turmeric.
Fry for 5 minutes then add the fish fillets. Carefully fry on each side for about 3 minutes. Now pour in just enough water to barely cover the fish. Add the chillies and tomatoes (if using). Cover the pan and cook over medium heat for about 10 minutes, or until the fish is cooked through.
Add the chopped coriander and continue cooking, covered, for 5 minutes more. Serve hot, accompanied by rice.
