Maffi Gumbo (Okra Sauce) is a traditional Guinean (from Guinea-Conakry) recipe for a classic vegetarian sauce of okra in a hot chilli, onion, Maggi cube and palm oil base that can be served by itself or used as a base for meat and fish dishes. Ingredients:
400g okra, diced
2 medium onions, chopped
2 Maggi cubes
salt and freshly-ground black pepper, to taste
hot chilli paste, to taste
red palm oil
Method:
Heat 100ml red palm oil in a pan. Add the onions and chilli paste and fry for about 4 minutes or until soft.
Stir in the okra and continue cooking for 2 minutes. Stir in enough water to double the volume, bring to a boil then add the Maggi cube and season to taste.
Bring back to a simmer and continue cooking until all the liquid has evaporated away.
