Maacher Chop (Indian Fish Croquettes) is a traditional Indian recipe (from Bengal) for a classic dish of fish flesh blended with onion, potatoes, chillies, ginger, salt and black pepper that are shaped into triangles, breaded, and fried before serving. Ingredients:
500g white fish, boiled until tender, flaked and mashed in a mortar
1 medium onion, finely chopped
2 medium potatoes, boiled, peeled and mashed
2 green chillies, finely chopped
1/2 tsp fresh ginger, grated
salt, to taste
1/2 tsp freshly-ground black pepper
1 tbsp coriander leaves, chopped
1 egg, beaten
200g fine breadcrumbs (to coat)
100g ghee, for frying
Method:
In a bowl, work together the fish, onion, potatoes, chillies, ginger, salt and black pepper. Grease your hands then take small pieces of the mixture and shape into triangles.
Brush each triangle with beaten egg then roll in the breadcrumbs to coat evenly. Heat the ghee in a pan and use to shallow fry the croquettes until golden brown all over. Remove with a slotted spoon, drain on kitchen paper then serve hot accompanied by your choice of chutney and shredded onion.
