Limón Pollo (Lemon Chicken) a Classic Mexican recipe for a dish of chicken stir-fried with onion, garlic and ginger that's finished by stewing with lemon juice, lemon zest, soy sauce, herbs and spices.

Ingredients:

500g chicken
1 onion, chopped
2 garlic cloves, finely chopped
1/2 tsp ginger, chopped
juice of 2 lemons
finely-grated zest of 2 lemons
2 tbsp soy sauce
1 bunch of mixed herbs
pinch of ground cinnamon
pinch of ground ginger
salt and freshly-ground black pepper, to taste
oil for frying

Method:

Cut the chicken meat into cubes.

Heat a little oil in a pan, add the onion, garlic and ginger and stir-fry for about 4 minutes, or until the onions are soft but not coloured.

Add the meat and stir-fry for 2 minutes more, stirring constantly. Pour in the lemon juice and soy sauce then add 150ml water. Bring to a boil hen add the herbs, cinnamon, ground ginger and the leon zest.

Season to taste, reduce to a simmer, cover and cook for about 45 minutes, or until the chicken is tender.

Serve hot, accompanied by rice.
