Liberian Rice Bread is a traditional Liberian recipe for a classic cake made from a batter of cream of rice, vegetable oil and mashed banana, flavoured with nutmeg that's leavened with baking soda and baked in a loaf tin. Ingredients:
450g Cream of Rice cereal
650g mashed bananas
120ml vegetable oil
4 tbsp sugar
1/2 tsp freshly-grated nutmeg
1 tsp salt
240ml water
1 tsp baking soda
Method:
Simply mix all the ingredients together thoroughly in a large bowl. Tip the resultant dough into a well greased rectangular cake tin (about 20cm x 30cm) and bake in an oven pre-heated to 200°C (400°F/Gas Mark 6) for about 30 minutes, or until a skewer inserted into the centre of the bread emerges clean.
This bread is traditionally used as either an accompaniment to coffee or as a bread. It is very versatile and will remain moist for a full week.
