This is a modern twist on the traditional scone recipe that needs only three ingredients, can be prepared in 10 minutes with only five active steps. Thickened cream is an ingredient that I had not heard of before. Basically, it’s a whipping cream containing a thickener that has a minimum fat content of 35%. Essentially, it’s a replacement for double or whipping cream, but with almost 13% less fat.
Ingredients:
420g (3 ½ cups) self-raising flour
250ml (1 cup) thickened cream
250ml (1 cup) lemonade (the sparkling type)
Method:
Mix all ingredients in a bowl with a knife until nearly combined. Turn out onto a floured surface and turn three or four times (this is the kneading technique of folding half the dough over the other half, flattening doing the same thing again). Now pat it until about 3cm (1 in) thick.
Cut using a scone cutter and do not twist the cutter as this will affect how the dough rises.
Add to a lined air fryer basket. Bake at 180°C for 8-10 minutes, flip and bake for a further four minutes.
Serve with whipped cream and jam.
