Pour the coconut milk into a measuring jug and make up to 400ml with water.
Wash the Jasmine rice thoroughly and drain. Place in a pan then add the lemon myrtle leaves before pouring over the water and coconut milk mix.
Add the salt then bring to a boil. Reduce to a simmer, cover the pan with a tight-fitting lid and cook gently for about 25 minutes, or until the rice is tender and all the liquid has been absorbed.
Take the rice off the heat and se aside to stand for 10 minutes. Fluff the rice with a fork and serve immediately.
