Lemon and Condensed Milk Biscuits

Ingredients:

350g plain flour
100g caster sugar
2 tsp baking powder
1/2 tsp finely-grated lemon zest
200ml condensed milk
pinch of salt
225g unsalted butter
1/2 tsp lemon juice
icing sugar, for dusting

Method:

Dice the butter then add to a bowl with the caster sugar. Using a wooden spoon cream these ingredients together until pale and fluffy. Gradually add the condensed milk, beating all the time, then work in the lemon zest and the lemon juice.

Sift together the flour, salt and baking powder. Gradually work the dry ingredients to he wet ingredients until they are all incorporated and the mixture comes together as a dough.

Line a baking tray with greaseproof (waxed) paper. Take teaspoons of the dough and roll into balls. Set these on the baking paper then flatten with the tines of a fork.

Transfer to an oven pre-heated to 170°C and bake for about 12 minutes, or until just beginning to colour. Remove and transfer to a wire rack. Allow to cool completely and dust with icing sugar before serving.
