Leftover Rice Muffins: A British recipe for a savoury muffin made from leftover rice and meat bound with cheese and egg.
Ingredients:
150g cooked rice
90g grated cheese
4 tbsp olives (black or green), chopped
200g leftover turkey, ham or chicken or 1 small tin of tuna or salmon, drained
1 egg
salt and freshly-ground black pepper, to taste
100g onion wedges, bell pepper strips or
dill pickles (whatever vegetables you like)
Method:
Mix together the rice, cheese, olives, meat and vegetables in a bowl. Season to taste with salt and black pepper then stir through the egg.
Spoon the mixture into the wells of mini muffin tins (you will need 2 x 12 well tins) that have been greased beforehand.
Transfer to an oven pre-heated to 200°C and bake for about 12 minutes, or until the cheese has melted and the egg is cooked.
Remove from the oven and set aside to cool in the tin (they are easier to remove that way).
Serve either warm or cold.
