This is the classic Turkish flatbread for using with kebabs. It is also prepared on Turkish Cyprus
Ingredients:
2 1/2 tsp active dry yeast
300ml lukewarm water
2 tsp sugar
4 tbsp butter (or margarine), melted and cooled
425g flour
2 1/2 tsp salt
sesame seeds, to garnish
nigella seeds, to garnish
Method:
In a large bowl, stir the yeast into the warm water until the yeast has dissolved completely. Add the sugar, stirring until dissolved. Set aside to activate for about 10 minutes until the yeast is frothy.
Once the yeast is frothy, stir in the melted butter then sift over the flour and salt. Mix the flour into the liquid, bringing everything together as a dough. Turn out onto a floured work surface (add a little extra flour for dusting if necessary) and knead for a 8-10 minutes, until the dough is smooth and elastic. Shape the dough into a ball then transfer to a bowl greased with a little olive oil. Turn the dough in the bowl to coat then cover the bowl with clingfilm and set aside in a warm place to prove for two hours, or until doubled in volume.
Pre-heat your oven to its highest setting and place the rack in the centre of the oven.
Knock the dough back then divide into 10 equal-sized pieces. Shape these into balls and arrange on a floured work surface. Cover with greased clingfilm and allow to prove for 15 minutes.
Place the first piece of dough on a floured work surface and roll out to a circle a little less than dinner plate size. Sprinkle sesame and nigella seeds onto the dough, then roll these in with the rolling pin with one last stroke.
Using a bread paddle or similar transfer the dough to the centre of your oven and bake for about 8 minutes, or until the centre of the dough has puffed up high and is beginning to brown. Prepare the next piece of dough as you wait.
Remove the first piece of bread from the oven and warp in a tea towel to keep warm as you cook the next piece.
Continue until all the breads are baked. Serve warm.
