Lasary Manga (Mango Condiment)

Lasary Manga (Mango Condiment) is a traditional Malagasy recipe (from Madagascar) for a classic condiment made from a blend of salted mango and onion flavoured with chillies, white wine and lemon juice that's stored in jars to mature before serving. Ingredients:

2 green mangoes
1 large onion, very thinly sliced
2 tbsp salt
1 tsp freshly-grated ginger
2 garlic cloves, grated
1 tsp mild curry powder
6 green chillies, grated
12 piri-piri chillies, grated
150ml white wine vinegar
150ml fresh lemon juice, strained

Method:

Peel the mangoes and grate the flesh with a coarse grater. Combine the grated mango and the onion slices in a non-reactive (glass or ceramic) bowl and scatter over the salt. Toss to combine and set aside for 24 hours.

After this time, stir in all the remaining ingredients. Mix thoroughly with a spoon then spoon into cleaned and sterilized jars. Store in the refrigerator and allow to mature for at least 3 days before use.

Serve as a condiment.
