Langues de Chat (Cat's Tongue Biscuits) is a traditional French recipe for a classic thin biscuit (cookie), shaped like a cat's tongue made from a piped egg-white batter flavoured with vanilla that's traditionally served to accompany desserts, coffee or sweet wine. Langues de Chat (Cat's Tongue Biscuits): A French recipe for a thin biscuit (cookie), shaped like a cat's tongue made from a piped egg-white batter flavoured with vanilla that's traditionally served to accompany desserts, coffee or sweet wine.
Cream the butter in a bowl, add the sugar and beat into the butter until pale and fluffy.
Now beat in the vanilla extract, flour and egg whites until you have a smooth batter.
Grease and lightly flour a baking tray. Spoon the batter into a piping bag fitted with a wide, plain nozzle.
Pipe biscuits onto the baking tray (you only need to pipe a single line for each biscuit, they will spread as they cook), making sure the biscuits are well spaced apart.
Transfer to an oven pre-heated to 200°C and bake for about 7 minutes, or until lightly golden in colour.
Remove from the oven, allow to cool on the baking tray for 10 minutes, then transfer to a wire rack to cool completely.
If desired, once the biscuits have cooked you can decorate by drizzling over lines of chocolate, or by dipping one end in chocolate.
