This is the classic way of using the Breton spice blend, Breton Kari, marrying the spicy blend of spices with crustacea; langousines in this case.

Ingredients:

12 langoustines
Drizzle of olive oil
a pinch of Breton Kari spices for each langoustine
6 rashers of streaky bacon
salt and freshly-ground black pepper, to taste

Method:

Carefully peel the langoustines, so the main body is exposed. Thread a skewer through the langoustines then stretch a strip of smoked streaky bacon over the back of the crustacean.

Add a drizzle of olive oil to each one, spreading over the langoustines. Season with a pinch of Breton Kari, salt and black pepper. Sit on a plate, transfer to your refrigerator and set aside to marinate over night.

Place a large non-stick frying pan over medium heat. Add the langoustines and fry for a couple of minutes on each side, just long enough for them to turn ping and be cooked through. Be careful not to over-cook.
