Lamb Burgers with Mint and Pine Nuts: Classic Cypriot recipe for a barbecue burger made from a blend of minced (ground) lamb with onion, pine nuts and mint that are served in pita breads with Feta cheese and salad.

Ingredients:

500g lean minced (ground) lamb
1 small onion, finely chopped
50g pine nuts
2 tbsp fresh mint, chopped
salt and freshly-ground black pepper, to taste

4 pitta breads, to serve
75g Feta cheese, to serve
salad leaves, to serve

Method:

Combine the minced lamb, onion, pine nuts, mint and seasonings in a large bowl. Mix together thoroughly, then using your hands, divide the meat mixture into for equal-sized portions and shape into round patties, pressing the mixture together well.

Cover the burgers and set aside to chill in the refrigerator for about 30 minutes.

Sit the burgers on a greased barbecue rack set over hot coals and cook for about 4 to 6 minutes per side, or until cooked to your liking.

When the burgers are nearly ready, warm the pitta breads at the side of the barbecue.

Crumble the Feta cheese, then line the pitta breads with the salad leaves. Sandwich the burgers inside the pitta breads and top with the crumbled Feta cheese.

Serve immediately.
