Ingredients:
2 tsp garlic, minced
1 onion , chopped
3 tbsp mild curry powder
1 tsp smoked paprika
1 tsp cumin powder
1l water
120g plain flour
1kg lamb meat, cut into serving-sized pieces
5 potatoes, peeled and cut into chunks
oil for frying
Method:
Place a large pan over medium heat. Once hot add the oil. Use to fry the onions for 2 minutes then add the lamb, stir to combine and cook with a lid for 2 minutes.
Scatter over the curry powder, cumin and paprika. Stir to combine the ingredients then fry for 5 minutes.
At this point sift over the flour and stir to combine. Make sure the flour is thoroughly mixed in and free of lumps.
Slowly add the water and stir, allowing the curry mix to thicken and cook right through. Stir and cook for about 5 minutes over high heat.
Lastly add the potatoes, bring to a simmer and cook over low heat with lid on for 15 minutes, stirring and allowing the potatoes to cook until fork tender.
Season to taste with salt and serve accompanied by rice.
