Lafet Time (Honey-glazed Pork with Salad) is a traditional Vanuatu recipe for a dish of grilled honey-glazed cooked pork served on a bed of sweet potatoes and accompanied by a vegetable salad. Ingredients:
For the Pork:
3-4 small kumala (sweet potaotes)
½ bundle moca (a type of watercress)
4 Slices of pre-cooked pork (or roast pork leftovers)
honey for coating
salt
Paprika or chilli flakes
For the Vegetable Salad:
½ papaya (partially ripe)
1 small cucumber
2 tomatoes
½ red onion
1 spring onion
1 bundle watercress – washed and healthy sprigs selected
1-2 cooked Tahitian chestnut (namambe or ivi) - grated
1 lemon
Method:
Peel and boil the kumala (Polynesian chestnuts) in salted water. Drain when cooked and slice ready for serving.
Blanch the moca in boiling water for about 2 minutes then drain and refresh in cold water.
Coat the pork pieces with honey and sprinkle salt and chilli flakes on top. Place under a hot grill (broiler) and cook until the honey has caramelized. Remove from the heat and put aside.
Plate pork by arranging moca on a couple of slices of kumala and placing pork pieces on top.
For the Vegetable salad: Dice the papaya, cucumber, tomato, and onions and place into a bowl. Add the watercress and toss lightly.
Squeeze the juice of a lemon over the vegetables and sprinkle the grated Polynesian chestnut on top before serving.
