Laap (Beef Salad)

Laap (Beef Salad) is a traditional Laotian recipe for a classic salad of fried beef that's cut into strips and mixed with lime juice, fish sauce, ground rice, garlic, herbs, spring onions and chillies before serving. Ingredients:

425g beef steak
juice of 1 lime (or lemon)
3 tsp fish sauce
2 tsp fried ground rice
5 mint leaves, minced
1 garlic clove, chopped
1 sprig of parsley, chopped
1 spring onion, chopped
3 fresh chillies, died
salt and freshly-ground black pepper, to taste
oil for frying

Method:

Heat a little oil in a pan, add the beef and fry for about 3 to 4 minutes per side, or until nicely browned and heated through.

Remove the beef from the pan and allow to rest for 5 minutes before slicing into small strips. Transfer these strips into a large bowl then add the lime juice and toss to combine. Add the fish sauce and the fried rice and stir to mix.

Season to taste with salt and freshly-ground black pepper.

Immediately before serving add the mint, garlic, parsley spring onions and chillies. Toss to combine and serve.
