Kyufteta (Barbecued Pork and Beef Patties) is a traditional Bulgarian recipe for a classic home-made patty of beef and pork bound with eggs and flavoured with herbs and cumin that's barbecued or grilled before serving. Ingredients:

450g minced beef
450g minced pork
1 medium onion, finely chopped
75g fresh parsley, finely chopped
1 tsp black pepper
2 tbsp ground cumin
2 tsp dried oregano, crumbled
2 medium eggs
70g dry breadcrumbs
salt, to taste

Method:

Combine all the ingredients in a large bowl and season to taste with salt. Mi thoroughly then cover and refrigerate over night.

When ready light your barbecue or heat your grill (broiler). Take a little of the meat mixture at a time and form into hamburger-shaped patties. Cook for about 4 minutes per side, or until completely cooked through.
