Kroštule (Dalmatian Pastry)

This is a recipe for a classic Croatian egg-yolk pastry that, traditionally is used for frying as Franjki but which can also be used as a rich pastry in just about any dish.

Ingredients:

200g plain flour
3 egg yolks
1 tbsp sugar
1 tbsp smetana (smetana is a mix of sour cream and yoghurt at a ratio of 3:2 seasoned with salt and black pepper)
2 tbsp rum
salt, to taste

Method:

Sift the flour in a bowl. In a separate bowl whisk together the egg yolks with a pinch of salt. Form a well in the sifted flour and pour in the whisked egg yolks, smetana and rum. Bring the ingredients together as a firm dough then knead for a few minutes, until elastic.

Cover the pastry with clingfilm (plastic wrap) then refrigerate for 30 minutes. At the end of this time turn the pastry out onto a lightly-floured work surface and roll out to the desired shape and thickness. Use as you would any other pastry.

This is also made into a very simple dessert by deep frying the pastry and dusting with icing sugar before serving.
