Franjki (Dalmatian Fried Pastry)

Franjki (Dalmatian Fried Pastry) is a traditional Croatian recipe for a classic dish of deep fried pastry made with egg yolks and sour cream that are deep fried and dusted with a mix of caster sugar and vanilla sugar before being served. In Croatia this is a traditional dish for Shrove Tuesday (Fat Tuesday).

Ingredients:

200g plain flour
3 egg yolks
1 tbsp sugar
1 tbsp smetana (smetana is a mix of sour cream and yoghurt at a ratio of 3:2 seasoned with salt and black pepper)
2 tbsp rum
caster sugar
25g vanilla sugar
salt, to taste
oil for frying

Method:

Sift the flour in a bowl. In a separate bowl whisk together the egg yolks with a pinch of salt. Form a well in the sifted flour and pour in the whisked egg yolks, smetana and rum. Bring the ingredients together as a firm dough then knead for a few minutes, until elastic.

Cover the pastry with clingfilm (plastic wrap) then refrigerate for 30 minutes. At the end of this time turn the pastry out onto a lightly-floured work surface and roll out as thinly as you can. Take a fluted pastry cutting wheel and cut into tagliatelle-like strips. Shape these as desired (turn into whorls, spirals, nests etc).

Add oil to your deep fryer or wok and heat to 180°C. When hot add the pastry and fry until golden. Remove with a slotted spoon and drain on kitchen paper. Sprinkle with a mix of caster sugar, vanilla sugar and a little salt and serve hot.
