Kosksu bil-Ful (Couscous with Broad Beans) is a traditional Maltese recipe for a classic vegetarian dish of couscous with broad beans and tomatoes in a tomato base flavoured with herbs. Heat a little olive oil in a pan, add the onion and garlic and fry for about 8 minutes, or until golden brown. Now add the chopped tomatoes and the tomato purée. Stir in the herbs and the water then bring the mixture to a boil.
Add the couscous, reduce to a simmer and cook for about 8 minutes, or until done. Now add the broad beans and cook for a further 10 minutes, or until tender. Serve hot.
