Kondré de Porc (Kondré of Pork): a classic Cameroonian recipe for a dish of cubed pork cooked with plantains, ginger, onions, chillies and bell peppers that is typically served with rice.
Ingredients:
2kg pork cut into cubes
3kg plantains
2 onions, chopped
5 garlic cloves, finely chopped
2 thumb-sized pieces of ginger, peeled and grated
3 bayleaves
2 cubes of bouillon (pork, chicken or vegetable)
2 hot chillies
1 yellow bell pepper
1 bunch of African blue basil, finely chopped
Method:
Peel the plantains. Add these and the bayleaves to a large pan and cover with plenty of lightly-salted water. As soon as the water begins to boil add the pork.
In a bowl, mix together the garlic, ginger, bell pepper, chillies and basil. Turn this mixture into the cooking pot then crumble in the bouillon cubes.
Heat a little oil in a pan and use to fry the onions until browned. Turn these into the pot, bring to a boil and cook, uncovered, until the pork is tender and the mixture has thickened (about 40 minutes).
