This is a rather unusual soup from Denmark, intended to be served as a dessert. It's something part-way between a sweet cold soup and a cold drink. It was brought to my attention by a friend who well knows my love of all things buttermilk!
Ingredients:
1l buttermilk
4 egg yolks
100g vanilla sugar
4 tbsp lemon juice
Kammerjunker biscuits (or similar), to garnish
Method:
Cream together the egg yolks and vanilla sugar until pale and frothy. Slowly add the buttermilk and lemon juice whilst whisking constantly. Transfer to the refrigerator and chill for at least 2 hours before serving.
Divide the mixture between 4 chilled bowls then garnish with about 6 lightly-crushed biscuits each. Serve immediately.
