Kammerjunker Biscuits

These are a classic Danish home-made biscuit (cookie) that are served both as tea-time treats and to garnish dishes such as Kolfskål [Buttermilk Dessert Soup].

Ingredients:

300g plain flour
1 tsp baking powder
1 tsp ground cardamom
130g good-quality unsalted butter, diced
1 tsp freshly-grated lemon zest
3 tbsp sugar
1 egg
500ml whole milk

Method:

Sift the flour and baking powder into a bowl then and the cardamom and mix thoroughly. Rub the flour into the butter mix with your fingertips until the mixture resembles fine breadcrumbs. Now add the grated lemon zest and the sugar and mix thoroughly.

In a separate bowl, whisk together the milk and the egg until thoroughly combined. Add this mixture to the flour mix and bring the ingredients together as a dough. Turn onto a lightly-floured work surface and knead until smooth and elastic. Divide the dough into two portions and roll each into two sausages about 3cm in diameter. Slice each one into about 30 pieces then transfer to a lightly-greased baking tray.

Place in an oven pre-heated to 200°C and bake for about 10 to 15 minutes, or until the biscuits have dried and are golden brown. Transfer to a wire rack to cool before storing or serving.
