Koko Alaisa is a highly valued dessert in Samoa; it is a rice pudding made with coconut milk and 100% pure cocoa.
Ingredients:
200g of rice
500ml of cold water
3 tbsp of 100% pure cocoa powder
125g of sugar
400ml tin coconut milk
Bread slices
Butter
Method:
Place the rice in a fine-meshed sieve then wash thoroughly under cold running water until the liquid runs clear. Drain the rice, transfer to a saucepan then pour in enough water so the rice is covered by 3cm.
Bring to a simmer over medium heat, cover with a lid and cook for 10 minutes.
Mix the cocoa with a little water and stir well until you have a smooth slurry.
Once the 10 minutes cooking time have passed, stir the cocoa mixture into the rice. Mix thoroughly to combine, and cook for 5 more minutes over low heat.
Add the sugar and coconut milk, mix well and cook for 5 more minutes over low heat.
In Samoa, it is common to eat this dessert with a slice of bread and butter.
