Khatai Biscuits is a traditional Afghan recipe for a classic biscuit (cookie) of a flour, sugar and vegetable oil dough flavoured with cardamom seeds that are baked and dusted with ground pistachio nuts. Combine the flour in a bowl with the sugar and cardamom seeds. Stir in the oil and mix thoroughly. Take pieces of the resultant dough and shape into 5cm diameter balls.
Arrange these balls on a lightly-greased baking tray and press down gently so that they stay in place. Transfer to an oven pre-heated to 170°C and bake for about 15 minutes, or until lightly browned. Remove from the oven and sprinkle a little finely-ground pistachio nuts over the top of each biscuit.
