Khao Man (Coconut Rice)

Coconut rice can either be prepared with ordinary rice and makes an excellent accompaniment to savoury dishes. If prepared with sticky rice it goes very well with fruit such as fresh (or stewed) mangoes (see the recipe for
mangoes with sticky coconut rice.
Ingredients:
300g rice
500ml water
250ml
coconut cream
salt, to taste
Method:
If using sticky rice then place in a colander and rinse thoroughly for at least 2 minutes under plenty of cold running water, stirring all the while with your hand then drain well and use. If you are going to use ordinary rice then place in a bowl, cover with plenty of water and set aside to soak for at least 2 hours (preferably longer) then drain, rinse under running water, and set aside to drain again.
Place the prepared rice in a pan along with the water, coconut cream and salt. Mix to combine then bring to a boil over medium heat. Reduce to a simmer, cover and cook for 10 minutes, or until all the liquid has been absorbed. Turn the heat to low and cook for a few more minutes. This results in the rice on the base of the pan scorching slightly, which provides more flavour to the dish. Mix thoroughly to combine then serve.
