Jõulune aprikoosikissell vahukoorega (Apricot and Mulled Wine Fruit Soup)
Jõulune aprikoosikissell vahukoorega (Apricot and Mulled Wine Fruit Soup) is a traditional Finnish recipe for a classic dessert of a hot soup of dried apricots in non-alcoholic (or ordinary) mulled wine thickened with potato starch and served in heat-proof glasses. Ingredients:
1l non-alcoholic glögg or mulled wine
250g dried apricots
3 tbsp sugar (or to taste)
2 tbsp potato starch or cornflour
whipping cream, to garnish
Method:
Heat the glögg or apricots together in a saucepan. Bring to a simmer on a low heat then cover and cook for about 30 minutes, or until the apricots are softened. Take off the heat and use a hand blender to process until smooth then return to the saucepan.
Combine the potato starch or cornflour with about 4 tbsp water to form a smooth slurry then whisk into the soup mix. Bring just to boiling point then reduce to a simmer and cook for a few minutes, stirring constantly. Take off the heat, divide between heat-resistant serving glasses and serve garnished with softly-whipped cream.
