Glögg is a traditional Swedish Yuletide or Christmas drink of mulled wine. This is a traditional non-alcoholic version suitable for children that can also be used as a base for fruit soups.
Ingredients:
10 whole cloves
7 green cardamom pods, crushed
2 cinnamon sticks, halved
1cm piece of ginger
500ml water
1l cranberry juice
150g raisins
100g prunes, pitted
35g slivered almonds
1 orange, peeled and separated into segments
1l apple juice
50g brown sugar
Method:
Tie the cloves, cardamom, cinnamon and ginger in a muslin or cheesecloth bag. Combine with he water, almonds, raisins, prunes and orange in a large pan and bring to a boil. Reduce to a simmer, cover and cook for 45 minutes. Remove the spice bag and prunes (reserve the prunes) then stir in all the remaining ingredients.
Cover the pan and continue cooking until the mixture begins to bubble. Return the prunes to the mix then ladle some slivered almonds, a few raisins and orange segments into each serving glass before filling with the hot liquid. Serve immediately.
