Jolly boys are traditional country pancakes, originally developed to bulk-out the eggs when the backyard hens had stopped laying.
Ingredients:
150ml Milk
8 Rashers Bacon
2 tbsp Plain Flour
1–2 tsp Butter or Lard
1 Egg
pinch of Salt
Method:
Make a batter by whisking the milk, flour, egg and salt together (the constituency should be that of double cream). Leave to stand for at least 20 minutes and use this time to fry the bacon in butter or lard. When done, remove and keep warm.
Raise the heat under the frying pan and add a tablespoon of the batter. Baste the top with hot fat as you're frying and when done serve immediately with the bacon.
