Mochi pancakes are a classic Japanese breakfast dish that are also very popular in Hawaii. Typically they're made with an equal blend of glutinous rice flour and wheat flour, with eggs and soy milk (the typical breakfast milk in East Asia). You could substitute the soy milk with just about any milk you like, however. With their inclusion of baking powder, baking powder and sugar these are intended to be cooked like thick American pancakes, though you could omit these to cook thin crepes, instead.
Ingredients:
120g (1 cup) plain (all purpose) flour
120g (1 cup) glutinous rice flour
2 tsp baking powder
½ tsp baking soda
50g (¼ cup) sugar
¼ tsp salt
2 eggs
300-360ml (1¼ – 1½ cups) unsweetened soy milk
2 tbsp vegetable oil or olive oil
1 tsp vanilla extract
Method:
Combine both flours with the baking powder, baking soda, sugar and salt into a mixing bowl and whisk until incorporated.
In a separate bowl beat together the eggs, 300ml (1¼ cups) soy milk, oil and the vanilla extract. Pour the wet ingredients into the dry ingredients and beat until you have a smooth batter. It should have the consistency of double (heavy) cream. Add up to an additional 60ml (¼ cup) soy milk if needed to thin the batter.
Place a non-stick frying pan or skillet over medium heat. Once hot, grease with a little oil, drop in 60ml (1/4 cup) of the batter
Cook the pancakes until small bubbles appear on the surface. Flip over with a spatula and continue to cook for another minute until cooked through. Transfer to a low oven to keep warm.
Repeat the cooking process until all batter has been used. The batter is sufficient for 16 pancakes.
Serve the pancakes with maple syrup and fresh berries.
