Ingredients:
500g prawns (shrimp), peeled with tail-on, deveined
4-5 garlic cloves, finely chopped
5-6 sprigs of thyme, only leaves
1 tbsp jerk seasoning
1 tbsp runny honey
1 tbsp soy sauce
juice of 1 lime
2 tbsp olive oil
salt, to taste
Method:
Combine the garlic, thyme leaves, jerk seasoning, honey, soy sauce and lime juice in a bowl. Add the prawns, toss to coat then cover and set aside to marinate in the refrigerator for 30-60 minutes.
Either heat the olive oil in a frying pan or wok over medium high heat then add the marinated prawns along with marinade and cook approximately 3 minutes per side, or just until opaque and cooked through.
Or, barbecue: Heat your barbecue to medium-high heat. Thread the marinated prawns onto the skewers. Grill for 2-3 minutes per side, basting with the leftover marinade and cooking until prawns are fully cooked.
Serve accompanied by rice and mango salsa/mango chutney.
