Iwuk Efere

This is a traditional recipe from the Efik tribe, Cross Rivers State, Nigeria.

Ingredients:

1 small fresh fish
200g fresh king prawns (with shells)
1 small bunch of ewedu (Jute) leaves (substitute common mallow leaves)
15 medium-sized okra
1 small onion, chopped
4 medium-sided hot chillies, pounded in a mortar
1 slice of boiled yam (as a thickener)
3 tbsp ground, dried, crayfish (prawns)
4 tbsp palm oil
2 Maggi (or other stock) cubes
2l water
salt, to taste

Method:

Clean and gut the fish then season with some of the onion, 1 Maggi cube, salt and black pepper. Put in a steamer basket over boiling water and steam for 5 minutes.

Pour the 2l water into a large pot and bring to a boil. Add the ground crayfish, chillies, remaining Maggi cube and palm oil. Stir to mix and bring back to a boil. Pound the cooked yam to a paste and stir this into the stock to thicken.

Add the steamed fish and prawns and cook for 10 minutes. Reduce to a low simmer then wash and shred the okra and the ewedu before adding to the soup. Then add the onion.

Stir gently and season with salt to taste. Reduce to a simmer and cook gently, uncovered, for 10 minutes.

Take off the heat and serve hot, accompanied by pounded yam.
