This classic Israeli version of a Middle Eastern one pot rice dish is a true classic

Ingredients:

300g uncooked long-gain white rice
3 boneless, skinless, chicken breasts (or thighs), cut into 3cm pieces
2 tbsp olive oil
1 large onion, diced
2 garlic clove, minced
1 tsp ground cumin
1 teaspoon smoked paprika
500ml chicken stock
Salt and freshly-ground black pepper to taste

Method:

Place a large saucepan over medium-high heat. Add the oil and use to fry the chicken until browned all over (about 5-6 minutes).

Add the onion and garlic and fry until the onion is translucent (about 4-5 minutes).

Scatter over the cumin, smoked paprika, salt, and black pepper then stir to combine.

Add the rice to the saucepan, stirring to combine with the chicken mixture. Pour in the chicken stock and bring to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes or until the liquid is absorbed and the rice is tender.

Fluff the rice, turn into a warmed serving dish and bring to the table.
