Irish Potato Cake is a traditional Irish recipe for a classic cake made from a butter, sugar, egg and flour batter with mashed potatoes, walnuts, raisins and spices that is traditionally served at tea time. Sift together the flour, baking powder, salt, cinnamon, cloves and nutmeg in a bowl. Meanwhile, cream together the butter and sugar until light and fluffy then beat in the eggs one at a time and mix until well incorporated.
Alternately add the flour mixture and potatoes to the butter mix. Mix to combine thoroughly then add the nuts and raisins. Pour the resultant batter into a 25cm ring mould (Bundt pan) and place in an oven pre-heated to 160°C (320°F/Gas Mark 3) and bake for about 100 minutes, or until the cake is nicely browned and a skewer inserted into the centre of the cake emerges cleanly.
Allow to cool in the tin for 1 hour before turning onto a wire rack and allowing to cool completely.
