This is another classic Burkinabe method of serving the country's staple, yams.
Ingredients:
1 yam tuber, peeled, washed and cubed
2 tbsp groundnut oil
2 onions, sliced
125ml tomato purée
500ml water
salt and freshly-ground black pepper, to taste
Method:
Heat the groundnut oil in a saucepan, add the onions and fry for about 5 minutes, or until soft and just beginning to colour. Stir in the tomato purée and fry for 2 minutes, or until beginning to darken then work in the water.
Add the yam pieces and season to taste. Bring the mixture to a boil, reduce to a simmer, cover and cook for about 25 minutes, or until the yam pieces are tender and the sauce has thickened sufficiently to coat them.
Serve hot on a bed of rice as an accompaniment to fish or meat.
