Houbova Polevka Myslivecka (Hunters' Mushroom Soup) is a traditional Czech recipe for a classic mushroom soup flavoured with bacon and made with stock and red wine thickened with flour. Ingredients:
360g fresh mushrooms, sliced
1 large onion, finely chopped
1 tbsp olive oil
5 slices of bacon, chopped
35g plain flour
1.2l meat or strong vegetable stock
4 tbsp cream
salt and freshly-ground black pepper, to taste
250ml red wine
fresh parsley, chopped, to garnish
Method:
Heat the oil in a pan and use to fry the mushrooms, onion and bacon for about 10 minutes, or until well browned. Sprinkle the flour over the top then stir to combine and cook for 2 minutes, stirring constantly.
Add the stock and stir to until smooth. Bring to a simmer and cook for 5 minutes then stir-in the cream and season with salt and black pepper. Return to a simmer and cook for a further 5 minutes then ladle into soup bowls, garnish with chopped parsley and serve.
