Hrutka (Czech Egg Cheese) is a traditional Czech recipe for a classic cheese made from a blend of curdled eggs and milk that is traditionally served to accompany Easter ham. The full recipe is presented here and I hope you enjoy this classic Czech version of: Czech Egg Cheese (Hrutka).

This is a classic Czech Easter dish that, traditionally, is served sliced to accompany ham.
Ingredients:
12 eggs
1l whole milk
2 tbsp runny honey
generous pinch of salt
1/4 tsp vanilla extract
Method:
Mix all the ingredients in a bowl and beat thoroughly to combine. Pour the resultant mixture into a pan, place over low heat and cook very slowly until the mixture begins to curdle and the curds and whey separate.
Line a round fine-meshed sieve or colander with muslin (cheesecloth) and pour in the egg and milk mixture. Set over a sink or large bowl and allow the liquid to drain through for 3 hours.
Transfer to a refrigerator and chill over night.
The resultant egg cheese can be served chilled, warm or at room temperature and makes an excellent alternative to pâté, or a sandwich filling.
