In Scots dialect, a 'howtowdie' is a young chicken, or poulet. This is a classic stuffing for a small chicken, where the bird is typically cooked in a casserole.
Ingredients:
200g breadcrumbs
100ml water, marrow or suet
2 tbsp parsley, finely shredded
1 egg
salt and freshly-ground black pepper, to taste
2 tbsp freshly-grated lemon zest
freshly-grated nutmeg
1/2 tsp ground allspice
Method:
Combine the breadcrumbs and water (or marrow or suet) in a bowl. Stir in the parsley, lemon zest and seasonings then add the egg and bring the mixture together.
