Basil (authentically, Ocimum tenuiflorum Thai Holy Kaprao basil) is one of the favourite ingredients of the Thai people and they will combine basil with just about anything. This is the properly 'authentic' basil, tough Thai Sweet Basil Ocimum basilicum is often substituted. This recipe works equally well with pretty much any meat.

Ingredients:

3 tbsp groundnut oil
6 garlic cloves, finely chopped
400g lean steak, thinly sliced
1 small onion, sliced into thin wedges
100g sliced chestnut mushrooms
4 fresh Thai birdseye chillies, finely sliced
3 tbsp ketjap manis (sweet soy sauce)
3 tbsp Nam Pla (Fish Sauce)
20 fresh holy basil leaves

Method:

Heat your wok over high heat and add the oil. Once the oil is smoking add the garlic and then the beef.

Stir fry for 2 minutes, until the beef has browned all over. Add the onion and stir-fry for a further minute.

Now add all the remaining ingredients and stir fry for about 40 seconds. Serve immediately.
