This is a classic thickened elderberry stew from the Allgaeu region of Germany.

Ingredients:

500g elderberries (remove from the sprays using the tines of a fork)
sugar, to taste
pinch of salt
125ml milk
50g butter
1 tbsp flour
honey, to taste

Method:

Add the elderberries and a little water to a pan then cook until just softened. Add the milk then make a smooth paste of the butter and flour.

As soon as the milk is hot stir-in the flour and butter mix and continue cooking until the stew has thickened. Sweeten to taste, with honey and serve.

Traditionally this was made in a copper pan and was served in the pan. Sometimes toasted bread dice were scattered on top before serving.
