Holderkuechle (Elderflower Fritters) is a traditional German recipe for a classic dish of elderflowers dipped in an egg, milk and flour batter before being deep-fried in lard. Ingredients:
200g flour
2 eggs
125ml milk
small pinch salt
16 whole sprays of elderberry blossoms (elderflowers)
icing sugar for dusting
750g lard for frying
Method:
Combine the flour, eggs, salt and milk in a bowl then whisk to a smooth pancake-style batter.
Rinse the elderflowers several times with water then drain and pat dry with paper towels. Add the oil to a deep pan and when hot, briefly dip the elderflower sprays in the batter then drop in the oil and deep fry until golden brown.
