Hojuelas (Fried Puff Squares)

The secret of this pastry is to keep everything cold (if possible chill the flour in the refrigerator over night beforehand). Also, do not touch the dough or the ingredients at any point, as even the heat of your hands will make the dough hard to handle.

Ingredients:

110g butter
350g plain flour
1 tsp salt
1 tbsp sugar
5 tbsp orange juice
3 tbsp ice cold water
vegetable oil for deep frying
sugar, for dusting

Method:

Dice the butter and combine with the flour in a bowl. Cut the butter into the flour with two knives until the mixture resembles crumbs.

Add the salt, sugar, juice and water and mix to blend. Carefully turn the dough out onto a marble slab. Without touching the dough with your fingers roll it out then fold in half.

Repeat the rolling and folding process two more times then transfer to the refrigerator until well chilled (at least 1 hour).

Heat oil in a deep fryer to 180°C.

In the meantime, turn the chilled dough out onto a lightly-floured work surface and roll out very thinly then cut into diagonal diamond pieces. Make a slit in the centre of each one of these and drop in the hot oil.

Fry until golden brown then transfer the pastries to paper towels to drain.

Sprinkle the pastry squares generously with sugar and serve whilst warm (you will get about 24)
