Always pick the Common Hogweed,
Heracleum sphondylium and not the Giant Hogweed which is toxic and should not even be handled. It should be noted, however, that contact with common hogweed can cause photodermatitis in some people (this is much more extreme when you come in contact with Giant Hogweed).
Ingredients:
300g spring
common hogweed leaves (pick the leaves when very young and not completely open)
400g boiled potatoes
60g butter
200g corned beef, in small dice
salt and
black pepper
oil for frying
Method:
Blanch the hogweed leaves in lightly-salted boiling water for about 5 minutes then drain and shred. Add the leaves to a bowl along with the potato and corned beef. Add the butter and mix in. Stir to combine then season. Add some oil to a pan and heat. Add the corn beef hash to the frying pan and shallow fry until brown and crusted on the bottom. Turn over and fry until brown and crusted on top then serve.
