Hifridzi (Beef and Greens) is a traditional Zimbabwean recipe for a lightly curried stew of beef and greens in a fresh tomato base. The full recipe is presented here and I hope you enjoy this classic Zimbabwean version of: Beef and Greens (Hifridzi).

Ingredients:
600g (1 1/3 lbs) beef, cubed or 1kg (1 ¼ lbs) beef short ribs
l½ tsp black pepper
l½ tsp mild curry powder
½ tsp paprika
l1 small onion
l4 cloves garlic
l2 tomatoes, chopped
l generous bunch of greens (rape greens, covo, mustard leaf, collard greens, pumpkin greens).
Salt to taste
4 tbsp oil
Method:
Heat the oil in a medium to large pot. Add the meat and fry for a few minutes. Scatter over and stir in the black pepper, curry powder and paprika. Fry until the meat is golden brown. Add onions and the crushed garlic and continue frying until onions are translucent (about 5 minutes).
Season with salt to taste and pour in just enough water to cover the meat, (about 120ml [½ cup]. Reduce the heat to a simmer and continue cooking until the water has evaporated away (about 30 minutes). Test the meat with a fork to ensure it’s tender and cooked through.
If not ready add another 120ml (½ cup) water and continue simmering. At this point add the tomatoes and continue cooking for five minutes more. Add the sliced leafy greens and cook for 3-5 minutes (I prefer the greens to still be green and crunchy rather than too soft).
